Over the years, I've noticed that people tend to struggle the most with lunch and finding raw and fat-free recipes.
I am always looking for ways that I can help with that.
This recipe is delicious, raw and fat-free, and it makes for an excellent healing lunch!
It is also very low in calories, so don't be afraid to eat a ton of lettuce cups!!
INGREDIENTS:
1 head lettuce (romaine and leaf lettuce work best)
3 cups mango, diced
3 cups grape tomatoes, sliced
1 purple onion, diced
1/2 cup cilantro leaves, minced
1 lemon or 2 limes, juiced
1/2 orange, juiced
2 tsp cumin
1 tsp garlic powder
Salt and pepper to taste (optional)
METHOD:
Combine all ingredients, except for the lettuce, into a bowl and mix together.
Take individual pieces of lettuce, cut off the bitter end, and scoop the mango salsa into lettuce cups.
